El Angel - Christmas Coffee
THE STORY
Carlos and Gerardo Mendez are second-generation farmers who own the El Angel coffee farm perched atop a 1,500-meter mountain in El Salvador's Apaneca region. This region is known for its foggy fields, rich volcanic soil and diverse microclimates. Shade-grown coffee is cultivated here. Growing under a canopy protects the plants from direct sunlight and allows for slow growth, resulting in more complex flavours in the beans. Using wet processing, the coffee cherry pulp and skin are removed before the beans are fermented for up to 48 hours and then dried to achieve rich, balanced flavours. 250g bags only!
